The Jedi Council Speaks is another locally produced podcast. From what I can tell, it's an in-depth discussion of all things George Lucas. I attended a blogging and podcasting workshop created by the voice behind the scenes of The Jedi Council Speaks at the Broome County Teachers Center. He made it all seem pretty easy.
